Carlos,
You need PMP / PMI materials for this. One book I have read is "Information
Technology Project Management" - Kathy Schwalbe. Websites: google "project
management", www.pmi.org.
PMI not only gives you about the things you are looking for, but the whole
standards for Project Management. So you can use it not only for IT, but for
non-IT or even non-tech projects.
I took a course from Boston University and there are many institutes which
offer these.
